“This Tonkatsu Restaurant Made Me Appreciate Miso Sauce in a Whole New Way”
This Tonkatsu Restaurant Made Me Appreciate Miso Sauce in a Whole New Way Just a minute? Start here. The next section covers the key points you should know before visiting. Later, I'll also share a few simple tips that can make your meal even more enjoyable—not just here, but at almost any miso kat...su restaurant in Japan. ========================================== Quick Summary ========================================== If you're visiting Japan for the first time, here are a few things worth knowing before you go. +Unlike most tonkatsu restaurants, where pork cutlets are served with Worcestershire-style tonkatsu sauce or salt, this restaurant serves its tonkatsu with a rich red miso-based sauce. +One of my favorite moments is when the staff pours the miso sauce over the freshly fried tonkatsu right in front of you. If you can record a short video, it's a wonderful travel memory to take home. +The restaurant also offers a Telephone Interpretation Service, making it much easier for international visitors to order with confidence. Supported languages - English Spanish Portuguese Chinese Korean Thai +A typical set meal starts at around ¥1,500 (tax included). +A Japanese tonkatsu set meal usually includes: -Tonkatsu -Shredded cabbage -Rice -Miso soup -Japanese pickles -Green tea +This restaurant is popular not only with visitors, but also with Japanese locals who come here for dinner. +The rice served here is Tsuyahime, one of Japan's well-known premium rice varieties. +If you're traveling with a suitcase, you should have no problem dining here. +MoreInfo: If you're staying near Ginza or planning to visit the area, I personally recommend the Ginza branch, which has spacious table seating and is more comfortable for travelers with luggage. ==================== 1.What I Ordered ==================== I eat tonkatsu several times a month, and I've visited this restaurant many times. This time I ordered the Pork Loin Tonkatsu Set. This is one of the most popular choices among Japanese customers. The loin has just the right amount of fat, giving the meat a rich flavor with natural sweetness. ==================== 2.Other Popular Choices ==================== +Waraji Tonkatsu The pork is gently pounded before frying, making it surprisingly tender. The cutlet is also much larger than most visitors expect. If you order it, take a photo with your hand next to it. It makes a fun travel memory and clearly shows just how big it is. +Hire (Pork Fillet) Tonkatsu Made from a lean cut of pork with very little fat. A great choice if you prefer a lighter texture. -------------------------------------------------------- 3.A Small Rice Experience I Recommend -------------------------------------------------------- Many visitors naturally start eating the tonkatsu together with the rice. That's completely normal. However, I'd like to suggest trying something a little different. Before eating anything else, take just one bite of the rice by itself. Close your eyes for a few seconds. -Notice the aroma. -The texture. -The natural sweetness. You may discover something you weren't expecting. Many visitors remember the tonkatsu after returning home. Very few remember the rice. Yet Japan has many premium rice varieties, each with its own flavor and texture. Japanese people often pay as much attention to the rice as they do to the main dish. This restaurant serves Tsuyahime, one of Japan's most highly regarded rice varieties. The way the rice is cooked is also an important part of the experience. ==================== 4.Make It Part of Your Trip ==================== If you're traveling in Japan for several days, try keeping a simple rice journal on your phone. Take one photo of your rice bowl. Then write a few words such as: -Restaurant name -Rice variety (if known) -Sweetness -Texture -Your first impression After visiting several restaurants, you'll probably begin noticing differences you never realized before. When you return home, those short notes may become one of the most memorable souvenirs from your trip. ================================ 5.How I Recommend Enjoying Miso Katsu ================================ If this is your first time trying miso katsu, here's a fun way to compare different flavors. +++ Step 1 +++ Leave part of the tonkatsu just as it is. Sprinkle plenty of ground white sesame over another section. Add a little Japanese chili pepper (ichimi) to another. Now you can compare three different flavors. Adjust the seasonings however you like after your first few bites. Japanese mustard is also available if you'd like a little extra heat. The sesame makes the miso sauce smoother and adds a wonderful nutty aroma. The chili pepper creates a pleasant contrast with the sweet miso sauce. It's milder than many people expect, so don't be afraid to use a little more. +++ Step 2 +++ For the shredded cabbage, you have two good choices. You can dip it into the miso sauce already on your plate, or pour the shiso dressing over it. The shiso dressing provides a refreshing contrast to the rich tonkatsu. +++ Step 3 +++ Refills of shredded cabbage are free. +++ Step 4 +++ A typical Japanese way to enjoy a set meal is to rotate between the different dishes. Rather than finishing one item at a time, many people alternate between: -Rice -Tonkatsu -Cabbage -Miso soup -Pickles This keeps every bite enjoyable until the very end. ============================ 6.Travel Tip 1 – What Is Miso Katsu? ============================ Most tonkatsu restaurants in Japan serve their cutlets with tonkatsu sauce or salt. Miso is best known as the seasoning used in miso soup, but it also pairs wonderfully with pork. Tonkatsu topped with miso sauce is called Miso Katsu, a regional specialty that is especially popular in central Japan. Every restaurant prepares its miso sauce a little differently, so it's fun to discover your favorite style. ==================================== 7.Travel Tip 2 – Don't Miss This Rice Moment ==================================== If you're lucky, you may see the staff transferring freshly cooked rice into a large insulated rice container in the kitchen. Don't miss the chance to take a photo. The rice is wrapped in a huge cloth, and it's something many visitors have never seen before. If you're curious after returning home, it's an interesting part of traditional Japanese rice preparation to look up later. ============================ 8.Final Thoughts ============================ This restaurant offers much more than a delicious tonkatsu meal. It offers a chance to experience Japanese food culture through small discoveries. Watching the miso sauce being poured over your tonkatsu. Comparing different seasonings. Paying attention to the rice. Finding your own favorite way to enjoy each bite. These little experiences often become the memories that stay with you long after your trip. I hope this guide helps you enjoy not only this restaurant, but also many other Japanese meals throughout your journey. Enjoy Japan beyond the guidebook.

“One of my Favourite Yabaton's Misokatsu.”
Yabaton’s Misokatsu miso cutlet restaurant serves delicious miso katsu, with juicy pork and a rich, flavorful miso sauce. The generous portions, with rice and cabbage included in the set meals, and the option to order the katsu with both miso and tonkatsu sauce. I order my 2 ways.- Waraji Tonkatsu

“Best meat I have ever had!”
I went there upon the suggestion of an acquaintance of mine who was born and raised in Tokyo. If you have trouble finding this place by following Google Maps follow this route.: -go to Tokyo Station in front of the the entrance that says "JR Lines and next to it the sign saying "Tokaido, Sanyo Shink...ansen Track", right in front of the bus stand number 3, but DO NOT enter towards that door, but go down the stairs outside, in front of those two signs. Once you go down you will see "Kokumin" shop>walk after the "n" of the name of the shop and go on the five steps. You will see a room full of lockers and a 7-11 ATM. As soon as you go past this room you will find the restaurant, which has a green entrance outside and there is just a sign saying "GRANSTA YAESU", so keep that in mind in order to not miss it. I had the special miso pork katsu and it was delicious, simply the best meat I have ever had in my life and the sauce on it was great as well. The staff was very nice and there was no waiting time as there were few people there.

“Love this place but Tokyo Station is a maze”
To be honest compared to the Nagoya one, the staff seemed more relaxed but less smiley. It's fine though as my misokatsu was delicious and I would definitely come back. However it is a pain to find this place as Tokyo Station is a maze.
